Executive Chef

Cobey took on the job as Executive Chef at NEXT Hotel Brisbane in June 2016.  Previously Cobey worked as an Executive Chef with the Coats groups overseeing all venues, Eleven Rooftop Bar, The Jetty Southbank & The Jetty Oxford Street. Having completed his apprenticeship  in Il Cento Restaurant, he has worked in a diverse range of restaurants in Australia and Japan, collecting a number of achievements along the way, including ‘Rising Chefs of Australia’ for two years running.

Cobey’s culinary creativity, managerial and kitchen operations expertise will certainly enable NEXT Hotel® Brisbane to distinguish its food ordering, as we redefine the traditional hotel restaurant and introduce a brand new dining concept to the market.

For decades, it seemed that the only up-market hotel accommodation was Lennons Hotel in George St.

Who would have thought that fish tails would taste like this? Tender, fine white-fleshed fish rolled into ovals topped with spiced yoghurt and a dash of coriander and ginger to complement, but not overwhelm the delicate fish flavour.It was a dish almost too pretty to eat, but eat it I did along with a good selection of others from the kitchen of Executive Chef Todd Adams in Lennons Restaurant & Bar, Brisbane.

Lennons Restaurant is in the newly rebadged and refurbished Next Hotel Brisbane. It’s very a ‘smart’ hotel and has features frequent travellers have been moaning about for years like free Wi-Fi access through the hotel, not just the lobby, occasionally, when there’s not too many people. There’s also a very generous free four item a day allowance on the mini bar and sleep pods for when you arrive early in the day after a long flight and your room isn’t available until 3pm.

It’s a big call but we feel comfortable making it having experienced Lennon’s first hand. This new Queen St restaurant opened its doors a few months ago and it already has the Brisbane foodie community swooning. Located in Brisbane’s new futuristic, trend setting hotel – Next Hotel – this elegant yet edgy restaurant is offering mouth-watering meals using fresh, local produce.

I don’t know what interior designer they used but I’d like to! The restaurant is stunning. The vibrant space offers a variety of seating arrangements. So whether you are meeting with a group, having a business meeting, or an intimate date…Lennon’s has a place for you.

Last week I joined a bunch of bloggers for dinner at Lennons Restaurant & Bar in Brisbane’s NEXT Hotel (Level 2) and demolished three courses of gourmet comfort food that rivaled the offerings of Brisbane’s most luxurious dining venues.

And it’s not just the food that sets tongues wagging – the brasserie-inspired space is edgy and vibrant, the perfect mix of warmth and class. It’s captivating, intriguing and beautiful, with giant glass windows overlooking the bustling Queen Street Mall below and perfect lighting throughout.

I’m not going to lie, I really enjoyed the lunch at Lennon’s Restaurant and Bar

In a way, they are very cheeky with the design of their express lunch menu, because I want to visit every other weekday just so that I can try them all.

The express lunch menu is fantastic, you should definitely give it a go!
